I had a moan from my teen on Thursday – “there is literally nothing in the fridge!”
I know I know …. the day before the big shop … it happens!
Rustling up something from nothing can be a challenge, so I was reminded of this old post in the Kick Start group from Lou ….
“This is what I make when I “have nothing to cook”
Some chicken, ham or whatever is hanging about, if you’re a carni!
Cooked in coconut oil and seasoned with salt, pepper, hot smoked paprika and crushed dried chillies. Then whisk eggs with a little seasoning and some flat leaf parsley (maybe get a little pot of your fave herbs if you use them alot!).
Whack it in the pan, cook briefly on hob then whack in the oven for around 7-10 mins.
